Celebrate spring with this libation honoring a mythological maiden
If you’re a mythology buff or if you go cuckoo for classics, this drink recipe might be up your alley: called the Persephone Spritz, its name pays homage to the woman in Greek myth whose abduction to the underworld and regular return to the surface created the cycle of spring. Far less traumatizing than that ordeal, though, is this delicious cocktail, which comes courtesy of Kelsey Owens, mixologist at Market Table in New York City. “The Persephone Spritz is a refreshing and fun libation that’s sure to wow your guests. I’ve combined the Italian aperitif Cocchi Rosa with Aperol, pamplemousse liqueur, pomegranate juice and sparkling wine” to make a lovely “tribute to the traditional Champagne toast,” says Kelsey. Ingredients
- 1 oz. pomegranate juice
- ¾ oz. Cocchi Rosa (or Lillet Rouge)
- ¾ oz. Aperol
- ½ oz. pamplemousse liqueur (or triple sec)
- Top with sparkling wine
- Add all ingredients to a wine glass and stir.
- Garnish with pomegranate seeds.
